
This dish is so perfect for you guys that are watching your carbs, but love amazing flavor! A good Ribeye steak is my favorite, yes its got some fat going on but Fat is flavor. My dad growing up would make us steaks in a cast-iron, this was about the only thing he could make but they were so good. It was a special night when we would have steak! He also loved his eggs runny and with tons of pepper. The spinach and onions just take this dish to a whole new level, they pair so great with the steak and the eggs. This dish just makes any breakfast or dinner really special, and the person you serve it to will feel special!
Steak and Eggs

Ingredients
- 1 steak per person, not too thick good Ribeye steak
- Eggs
- 1 bunch organic spinach leafy part only
- ½ large sweet onion such as Vidalia
- Canola oil
- ½ stick salted butter
Instructions
Preheat oven 350 degrees
In large Cast-iron skillet add one tablespoon each of oil and butter, saute onion till brown and tender, take out set aside
While cast-iron is still hot add the rib-eye, another tablespoon of butter, season steak with salt and pepper let brown on each side about 2 minutes
Then put in oven for about 6 to 8 minutes, timing will depend on how rare you prefer, I like more of a medium, so just less time for more rare.
Pull steak out, put on plate to rest, using same skillet put in spinach this should only take a couple minutes
Using non stick pan cook eggs in butter to desired doneness, over easy is nice so yolks can drip down over all the spinach, onions and the steak!
