
These beautiful, sweet carrots are such a treat! A lot of you may only think of eating carrots in the fall or winter, but they are so sweet right now in late spring/early summer, and if you can find the multi- color ones, they are the best! Another great thing about carrots, they are so reasonably priced, a whole bag for usually no more than $3.00, organic is usually a little more but most times worth it. I added some of my favorite ingredients to these beauties such as honey, ginger and orange juice, all these ingredients just brings out the sweetness of the carrots even more! This is a great side dish and carrots love pork, grilled chops with these, is a perfect pair! Get reacquainted with carrots, they are not just for a veggie platter anymore, this dish is so good and worth trying!
Roasted Tri-color Carrots

Ingredients
- 1 large bag of colorful carrots, peeled and cut on an angle
- 3 tablespoons good honey
- 1 tablespoon fresh ginger peeled and diced small
- ½ cup orange juice
- ½ stick butter
- 3 tablespoons good olive oil
- Kosher salt/pepper to taste, about a teaspoon each
- Chives cut in about one inch pieces
Instructions
With carrots peeled and cut, put in large bowl, add the honey, ginger and orange juice, mix well, let sit for about 5 minutes
Pour into roasting pan, you may need two pans, dollop the butter and drizzle with olive oil, add salt and pepper, mix again in sheet pan or pans trying for one layer of carrots, again two pans may be needed depending on size of your pan?
Roast till tender about 30 to 35 minutes, stirring once. Remove from oven, top with fresh cut chives right before serving!
